About 272 million turkeys were raised in 2001, with 46 million eaten during Thanksgiving, 22 million at Christmas and 19 million at Easter. In 2001, U.S. consumption of turkey was 17.5 pounds per person. Ninety-five percent of Americans eat turkey at Thanksgiving. Per capita U.S. Turkey consumption has increased nearly 220 percent since 1970. In 1970, 50 percent of all turkey was consumed during the holidays.
